Roasted Tomatoes Stuffed with Spinach & Goat Cheese

2 medium tomatoes
2 oz goat cheese
2 handfuls spinach
¼ white onion, chopped
olive oil
¼ egg, whipped
fresh or dried basil
fresh or dried oregano
olive oil
garlic powder
salt and pepper

Preheat oven to 425 degrees. Cover a baking sheet with foil.

Spray skillet with PAM or similar calorie-free cooking spray and saute spinach until wilted. Add in the chopped onion and cook on medium-low until translucent. Remove from heat.

In a small bowl, mix the whipped egg with a pinch of the herbs, and tiny sprinkle of garlic powder. S & P.

Cut a sliver off the bottom of each tomato, and stand them up straight in the baking pan. Cut off their tops and scoop out the inside pulp and core. Spoon in some spinach and onion mix. Drizzle in some egg and herbs mix. Follow with a bit of goat cheese, and then the rest of the spinach and onion mix. Drizzle in some more egg mix, and then top with the remainder of the goat cheese.

Put the baking sheet into the oven for 20-30 minutes, until the tomatoes are soft and their skins are beginning to peel. Sprinkle each tomato with leftover herbs and serve warm to two lucky people.
