This is a challenge recipe. Make it for someone who thinks they don’t like carrots and wait for the magic! Carrot Fries
4 big carrots, peeled
Preheat the oven to 400 degrees. Cover a baking pan with foil.
Using a sharp knife, carefully cut each carrot in half horizontally. Then slice each half into a number of matchsticks- irregularly-shaped is fine!
Sprinkle your various powdered and dried flavorings over the pan contents, as desired. Shake the pan to ensure the carrots are lying in a single layer- this will help them cook better.
Roast the carrot sticks until they become carrot FRIES aka soft, beginning to brown, and crispy around their edges- altogether this should take around 20 minutes. Halfway through the roasting, you may want to take the pan out and shake it around so all carrot sides have a chance to be exposed and therefore crisped.
Serves 2 as a side
4 carrots- 100
1 tbsp olive oil- 120
My grocery store sells bags for carrots for a dollar each. Using half a bag brings the cost of this side dish to around 50 cents.
The total number of calories (relevant because these are so addicting you could easily consume them yourself in one, quick sitting) comes to around 220, if you stick to one tablespoon of olive oil for carrot-tossing. Because this dish is meant to be shared, each of two people enjoying these carrot fries will be consuming around 110 calories. If you eat yours with a dollop of ketchup, keep in mind that’s another 15 calories per tablespoon!
